Crispy pie with berries

INGREDIENTS


For the puff pastry dough: 

  • 150 g butter
  • 120 g  of sugar
  • 300 g of flour (smooth)
  • 2 vanilla sugar
  • 2 egg yolks
  • pinch of salt

For the filling: 

  • 400 g of frozen forest fruits
  • 4 egg whites
  • 200 g of powdered sugar

PREPARATION:


Of all the ingredients knead dough crisp. From dough separate the quarter of which will subsequently form a rim. Roll out larger piece of dough the size of a round mold (28 cm diameter) and move it into a greased and floured sheet. Top of surface of the dough with a fork and bake it in a preheated oven at 180 ° C for 10 min. Remove mold with dough from the oven, cool a bit, and the rest of the dough to form a rim (do first roller so you press down with your fingers around the mold)
While the pastry bakes, whisk the egg whites, and then it gradually mix in the powdered sugar. At the end of a wooden spoon mix berries that you previously unfreeze and wrung of excess fluid. A mixture of egg whites and fruit spread on half-baked dough, flatten and bake until the end of the 150ºC another 45 min.
With the baked and cooled cake remove the ring and serve cut into thick slices.
If desired, sprinkle with powdered sugar :)
